If you don’t think you like cauliflower, then you have never had it roasted. Try it!
Preheat oven to 425 degrees.
Add cauliflower, garlic and olive oil to a large bowl and mix to combine. Spread evenly on a baking sheet, and season with salt and pepper to taste.
Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and broil for 3 to 5 minutes, until golden brown.
