If you like the robust flavor of olives, tomatoes, and rosemary, this is the dish for you. I find it works best using a cast iron skillet. Feel free to use any kind of olives you like…I prefer Kalamata.
If you like my Thai Curry Chicken Skewers with Peanut Dipping Sauce, then you will like this as well! Use whatever veggies you like…peppers and snap peas would be good. Serve over rice.
Confession time – I stole this recipe from Hello Fresh. and it cost me a whole lot less to make myself than ordering through them! I had everything at home except the chicken sausage, spinach, and grape tomatoes, which cost me about $10.

You can either make this Greek dish on skewers, or if you’re lazy (or don’t have a grill) do what I did. Put the ingredients in a baking dish and roast at 400 degrees for 20-25 minutes. Make sure you serve it with my Tzatziki!
You can use any type of pasta that you have on hand. The sauce is absolutely delicious!
